Mama Mia in Malawi

Yay for me, I am a good cook! I have said this before, but I will say it again. I used to hate cooking! I hated thinking about what to cook, shopping for ingredients, prepping and most of all, actually putting the meal together. I dreaded dinner time and often felt pressured to make something wonderful for my starving husband. I also felt guilty for not wanting to cook, as all good wives are skilled in the kitchen, right? Last year, all I wanted was a sandwich before bed. Of course I was pregnant, but I felt that way before I was pregnant, too!

Living in Malawi has really forced me to face my fears of cooking: handling different meats, chopping vegetables I had never tasted and standing on my feet in 90 degree weather with the oven on. I know that cooking nice dinners isn't what makes a woman an excellent wife, but it sure helps me feel a little bit better about not being able to get the laundry done!

Sadly, this is the only image I have for my baked ricotta stuffed shells with red sauce. I thought it was so cute, though that there was a large dish, a medium dish and a baby dish. It just worked out that way because there was so much food and not enough large casserole dishes.

Ah, the food looks so good! I am in a no-cooking rut here, but the photos are inspiring.

Not fair! I am looking at that pesto and stuffed tomato dinner, and now I am hungry! Looks good!
